  2. Rinse the quinoa thoroughly under cold water using a fine-mesh sieve to remove natural saponins that can taste bitter.
  3. Place quinoa in a small saucepan with 120ml water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork.
  4. While quinoa cooks, place the chicken breast and salmon fillet on a parchment-lined baking sheet.
  5. Drizzle proteins with half the olive oil and season with salt and pepper. Place in the oven for 12 minutes.
  6. Remove the sheet, add the asparagus (trimmed) to the tray, drizzle with remaining oil and lemon juice.
  7. Return to the oven for 8–10 minutes. The salmon should flake easily, and the chicken must reach an internal temperature of 74°C (165°F).
