  1. Rinse 100g of white rice under cold water until the water runs clear. Combine with 240ml of water in a small pot, bring to a boil, then cover and reduce heat to low. Simmer for 15-18 minutes until tender and water is absorbed.
  2. While rice cooks, cut the chicken breast into bite-sized cubes. Season evenly with half of the salt and pepper.
  3. Heat 10ml of olive oil in a non-stick skillet over medium-high heat. Add the chicken and sear for 6-8 minutes, stirring occasionally, until golden brown and the internal temperature reaches 74°C (165°F). Remove chicken from the pan and set aside.
  4. In the same pan, add the broccoli florets and a splash of water (about 2 tbsp). Cover with a lid and steam for 3-4 minutes until bright green and tender-crisp.
  5. Drain any excess water from the broccoli and return the chicken to the pan. Toss briefly with the remaining 5ml of olive oil and season with the rest of the salt and pepper.
